Mia Ringsparr´s Gluten Free Seed Crackers
My name is Mia Ringsparr and I moved to Adelaide, South Australia in 2007. Being born in Sweden in the 60’s, growing up in the 70’s, being a teenager in the 80’s and becoming a Mom in the 90’s (actually 1988, 1989 and 1999), I have experienced it all when it comes to eating, dieting and weight- loss: the good, the bad and the ugly. After many years trying all there is in weight loss (with not very good results I might just add), I finally found low carb around 2002. I haven’t looked back since and are happier and healthier than ever before. But- I have always missed something crunchy to go with my favorite cheese, and there is only so much dip you can eat with a spoon, especially at parties. I started to experiment in the kitchen to come up with a cracker of some kind. Learning by doing, is my motto and after a few years of trying different recipes I finally found what I was looking for. I baked for my family and friends until someone told me that I really ought to get them out to the public, since the crackers are not only delicious, but also nutritiously good for us. I gave it a go and the feedback is out of this world! I sell them to numerous places in, and around Adelaide, mainly to cheese shops.
The only ingredient in the cracker is what you see: sesame seeds, sunflower seeds and pepitas, as well as the four fantastic flavours: rosemary, caraway, cumin and nigella seeds. To make them stick together there is a small amount of psyllium husk, and to finish it off there is a hint of Himalayan rock salt.
